La ChiquitaniaLocated east of Santa Cruz, this area is home to 10 world-famous Jesuit mission churches (six of which were designated World Heritage Sites by UNESCO), a synthesis of Spanish and mestizo cultures. Also tucked away in this region is the production-based Menonite community, who reject arms and technology. And make yummy cheese.
